I was asking this recently, but who are the characters we’ve fought the most across all the different parts of the game from quests, to raids, to dungeon, in lore. Like we’ve fought Kel’Thuzad at least three times, we fought Kael three times, albeit you may not consider the third fight exactly fighting in specifically.
Who are the characters we’ve actually engaged in a fight with the most?
I don’t know if it counts, since we didn’t do it all, but Dar’Khan Drathir was killed by four different lore characters before players cut his head off. And as a seemingly unique elf-lich reanimated by a vaguely defined imbibition of necrotic Sunwell energy, there’s nothing to suggest the decapitation we delivered him will stick any more than incineration or disintegration did; in fact, it’s weirder that it’s kept him down this long. Maybe he’ll have another go in Midnight.

If we count both MU and AU encounters, Archimonde, Mannoroth and Gruul have popped up more than once. We also fight Kil’jaeden twice in the MU timeline. (Sunwell Plateau and Tomb of Sargeras)
Nefarian and Onyxia were also a couple that re-surfaced as secondary encounters in Cataclysm.
(I’m sure there’s more I’m not remembering!)
We have fought Ragnaros three times.
Molten Core, Hyjal story finale and Firelands (heroic).
I don’t count normal firelands as that is the non-canonical version of the raid.
Kael’thas is also three times from a certain point of view.
The Eye, Magisters’ Terrace and Castle Nathria. Although the latter has us trying to save him and we have to fight off not only Denathrius’s servants but also the physical embodiment of the fallen Princes sins (Shade of Kael’thas).
Kel’thuzad also. Naxx (vanilla), Naxx (Wrath) and Sanctum of Domination
There are a lot of characters that we have defeated at least twice. Four of which have two encounters within the same instance respectively. Those being Deathwing (Spine and Madness, Dragon Soul), Siegemaster Mar’tak (Hellfire Assault and Iron Reaver, Hellfire Citadel), N’zoth (Carapace and N’zoth proper, Ny’alotha), and most recently, Dathea (Primalist Council and Dathea, Ascended, Vault of the Incarnates). But Ragnaros, Kel’thuzad and Kael’thas (if you include his encounter in CN) are the only ones that we have fought at least three times that I can think of.
Teron’gor would be three times if we count his AU encounters alongside his MU one.
Teron Gorefiend in Black Temple
AU Teron’gor in Auchindoun and as Gorefiend in Hellfire Citadel.
Personally I prefer to keep AU characters separate from their MU counterparts. As they are different characters imo.

Not the case for the demons though. So archimonde and mannoroth counts.

How could I forget about Azgolar. Battle for mount hyjal, Hellfire Citadel (as a trash mob) and the Broken Shore intro to Legion, but only for horde characters.
So he sits in a weird spot of “2 for alliance, 3 for horde”.
Kazzak is also weird as his vanilla encounter is practically non-canon.
So from a gameplay pov, we have fought him three times. Those being vanilla / anniversary event, TBC and WoD. But only the latter two are canonical encounters. Since he is the one who kick starts TBC by reopening the Dark Portal via an artifact that is never heard of or seen again.

True, but we have only fought him once twice.
Stonecore as a mini boss in various trash packs and later as part of a duo encounter in Da Other Side.
He is an ally in The Arcatraz and shows up via magical hologram in Assault of Violet Hold if you get his estranged wife as a boss encounter (which is canonical as of Shadowlands). But we don’t fight him in Legion’s VH.
Alliance players fight nathanos like 3 times.
Once during the war campaign iirC, then during the night warrior scenario and at the end as a world boss in the shadowlands pre patch, where Tyrande kills him.
I feel like the Caverns of Time might be the key to edging out the most times we’ve had to engage with someone because of the whole nature of time travel and how we typically can’t actually kill them to preserve the timeline but still have to fight them. Mal’ganis we’ve fought once back in the Culling of Stratholme, we fought him again in Wrath of the Lich King questline with the Scarlet Onslaught, we fought him during the Shadowlands questlines to capture him and then again during the Sepulcher of the First Ones.
So is it Mal’Ganis? That’s Four time we engage with him in a fight before he’s finally dead for good. …I hope.

Are we also counting the Warcraft games before WoW?
Apart from that, I agree about Mal’ganis (side note, it’s another slap in the face to Arthas that Mal’ganis outlived him).
Actually it’s 4. Nathanos was a kill quest target in vanilla,
