I say go Enhancement Shaman to 80. It’s literally a mix of DW melee that you clearly enjoy with Fury, and offers the magic casting you’d find in a mage.
Also Stormbringer at level 80 is absolutely nuts.
I just made this mage a couple of days ago. Frost feels simple but I wanted to do arcane and that feels less simple haha! But that said, I’m having a good time on it so far. Massive amounts of tools to survive crazy stuff, a couple of AoE stoppers that may help in mythics, the interrupt is a bit longer if you’re used to warrior. We get a cool mass barrier spell to help with magic damage! Spell steal is super fun. And the arcane familiar is now a raven to my surprise. Very cool.

Thanks for the replies, I’ve narrowed it down to DK and Mage. I’ll probably have to just put some time into both to decide. I have no bias between ranged/melee.
I enjoy both my rogue and my mage, but confess the Mage is more fun and self-sufficient. Sadly, with no new changes to pick pocketing, my rogue feels almost toothless since Legion.
I always highly recommend mages. Specifically frost/frostfire. I think frostfire is the gold standard for hero trees. Simple, clear fantasy that feels amazing to play. The talents work with one another really well, and look like they are getting even better in 11.1. It helps that the three mage specs are already so clearly defined. But still I think everyone should try it just to know what can be done with hero talents. So we can expect better from all the others that feel lacking.
