Galadriel (Strong version) would’ve beat them both.
Want a fair fight? Lich King vs either the Night King from Game of thrones or the Horned King from Black Cauldron.
Sauron would be closer if not just under Sargeras level.
Plus two week old Death Battle is old news.

with Saurons mace that’s basically a sonic boom shockwave Peter Jackson film trilogy I’d have to go Sauron.
Can’t see the Lich king wanting to death grip that into himself, maybe if he played a rot dot play style.
1 vs 1: Sauron wins easily. He’s basically an angelic being that can alter reality itself.
Army vs Army: I still think Sauron will win because he can likely turn the Lich King’s allies against him.
Plot twist - Hogger Vs Sauron
Army vs army Lich King probably wins, unless Sauron’s orcs/Uruk-hai are immune to necromancy.
The weaker version in the book or The Cymru/Welsh God of Death and the Underworld? Cause that’s two very different fights. 
Probably go with the book, since; though as you stated is the weaker version, vastlymore interesting and the whole chaotic shenanigans of raising an entire kingdom, mountain range multiple armies and the most beautiful flower with no scent for a blind girl cause not absolutely a heartless monster… yet. Still on par based on their feats alone lol.
