What profs would pair well to make leveling in Classic more fun? I am partial to hunter and miner/engineer, myself.
Alchemy is fun
depends on what you find fun… i personally find it tedious to look for nodes and have bag slots filled with crafting mats (especially on hunters which already have reduced space for ammo and pet food), but if you really like the bombs feel free to go with it
just be mindful of not spending too much gold leveling your profession and not having enough for the level 40 mount

Miner/engineer will give you plenty of fun gadgets to play with. Engi also happens to be borderline op for pvp, so there is that.
It will also make getting ammo as a hunter quite a lot easier.

Im going Gnome Mage. Going skinning and enchanting. Getting gold for that mount. then switching to tailoring.
these boots were made for walkin, and that’s what they’ll do. besides, as level increases, so does capacity for gold-making. gotta use your grey matter 
and thats why i’ll level professions at 60 instead of while leveling
