Two days ago, I made chili. Since I LOVE meal prep, I made a lot of the chili in bulk and stored the majority in our deep freezer. Since that time, my daughter has already had several bowls of my chili. She helped make the chili. For the past few weeks, I’ve been telling her I was going to make stuff shell lasagna. Finding the time has been a challenge. However, I’ll have the time to do that this weekend. She’ll be helping me.

My favorite way to make spaghetti is a baked chilli style. Make your favorite chilli and use it in place of a regular sauce. Mix it in with your cooked pasta in an oven safe dish and then just smother it in your favorite cheese. I like a mix of old cheddar and mozzarella. Then bake it at as high a heat as your oven can go until the cheese is melted and starting to brown on top the same way as a pizza does.

Nice and spicy with lots of meat and beans, cheese and noodles… Making me hungry…

Oh, you mean Chili Mac? I do that when i have bulk amounts of leftover chili and I use a melted Cheddar and then crumble some Cojita over the top after it’s plated. I also make sure to have plenty of chopped cilantro on hand.

Naw, it’s different from Chilli Mac. The cheese isn’t mixed in it’s just melted on top and it uses spaghetti noodles, not macaroni. Kind of a cross between Cincinnati Chilli that is served on spaghetti and baked Spaghetti which is spaghetti with cheese baked on top.

Mmm spaghetti.
