I wonder how it works with Shadow Priests. Does the quest disappear if you change specs?

Only if you do every quest in the expansion.
Do you do that? Most people don’t.
If you skip any quest, there’s always the chance that this one quest you skipped is one of the Class-specific ones.
In fact, the first quest in this list is exactly that to me. I leveled through questing. I didn’t run into that quest. But I knew it existed because I had read about it on Wowhead, so after I finished leveling, I went looking for it.
