I’m still having a tough time deciding on what class to play. I’m thinking of my level 70 warlock. I have a 80 paladin but i don’t like the revamp of them. I miss that old style.
warlock has incredible durability across pretty much all specs, and pet classes often have a certain ease about them (cf. bm hunter). the only thing i might forewarn you is that being dps-only does lengthen queue times. you might miss the brevity of healer or tank q’s.

I would not call Warlock an easy class to play. Each of the specs has some intricacy to them and its pretty easy to do virtually no damage, especially in low content. Destruction is the easiest.
I do however find it one of the most rewarding classes

Destruction + Hellcaller is pretty straight forward - decent sustain, great 2 minute bursts.

it’s among the easiest ranged dps specs in the game, if not all dps specs outright, in my opinion. afflic is probably the most difficult, and there too it’s difficult even in comparison to other dps specs. but frankly i just think that’s in part because of bad design.
Afflic is not toooo bad. The biggest skill gap between Afflic is if you can cleave/aoe well.
In pure single maybe.
Go Demo, you are never alone. And as a gnome it is more funner.
Hunter and Warlock are both pet classes.

Afflic is pretty mobile but a bit tricky. Cast Haunt, keep dots up, spend soul shards and cast shadow bolts.
Destro has a lot of hardcasts and burst with Diabloist but Heckcaller is more comfy.
Demo is weird. Feels like it has the downsides of both specs, but none of the qualities. It is fun if you like an army of demons.
If you understand what everything does, it’s easy. Specially Destro.
I think guardian druid is my favourite right now. Cat weaving is actually a lot of fun.
Ravage, Mangle, Moonfire, Thrash, Rake/Rip repeat

depends what spec. destruction is easy and simple for single target builds. anything else…not really no lol.
affliction is a mess.
Call me crazy, but the number of demons you summon as demo gets to feel like a bit much by level 80. Adds a lot of clutter to the screen and gets to be a bit of a nuisance.
Don’t play affliction is my only advice to new locks. Not worth the hassle

I think not being able to see my demons in the middle of all that pile of models near the target is the worst. I don’t understand why there isn’t an outline mode option to highlight our pets.
It doesn’t play itself like say Hunter but it’s pretty straight forward.
With the Summon Sayaad spell, if anything, it’s easy on the eyes 
Well of the 3 destro is probably easier and great for cleave.
You can set a focus macro for havac and just lob chaos bolts.
Ngl wish there was a chunky Sayaad option but I digress.
