Imagine being a citizen of lordaeron, getting killed by the scourge, raised as an undead, dies again in battle, gets brought back by Arthas as a Death knight, finally dies only to find out they have to spend eternity in an afterlife.

You’ve got the option. You’d just have to get yourself killed (again).
On a slightly related note, the fact that there are Forsaken in the Shadowlands means being raised into undeath literally alters your soul. Otherwise, they’d all be human.
Work all your life to find you have to continue working for eternity. Or something like that.

So from my perspective, there was eternal nothingness before I was born, and there will be eternal nothingness after I die, but as I came from eternal nothingness, there’s a 50/50 chance of being in eternal nothingness forever until existing again…

You know that Kyrian brainwashing thing, where they make you forget your past life? That seems like a mercy in WoW to me.
So many people lead brutal, unhappy existences, ending in a horrifying death that isn’t always the end, only to lead ANOTHER brutal, unhappy existence before ANOTHER horrifying death. I’d prefer to just forget all that and move on, given the choice.

Doesn’t Vashj and Pelagos imply you pretty much get to choose how you appear in the Shadowlands? Maybe the souls we see who still have Forsaken models chose to look like their undead selves because they were proud of their lives as such (or maybe Blizzard just used their models so we’d see Forsaken aspirants in Bastion and it would shoot down the argument that 'being turned undead damns your soul!"
Nobody wants to cease to exist per-say, however if your afterlife is one of the SL afterlives I would probably want to cease existing too.
It isn’t entirely without merit.
You don’t have to pay taxes anymore, for example.
