All the characters I created through remix will be level 70 and be getting a profession for the first time when they start War Within. That means that they will be able to start all professions at latest level.
Therefore my question is does it make sense to keep the crafting reagents from earlier expansions. Before the leveling squeeze I remember having to do catch up tasks to get professions on new characters up to latest. Is that still the case?
I was saving stuff so that I wouldn’t have to hunt as much but when a new character can already start the new level it seems a waste to go spend time learning the older stuff.
Only if you’re looking for completeness and achievements of previous expansion’s professions.
and the old professions reagents do still sell for the people like henceforth said completionist

Some older transmogs, from TBC for example, can sell very well on the AH.
For the sake of leveling professions themselves, nope, they’re all compartmentalized per expansion now. You no longer have to level through expansions sequentially (it’s been like this for a while actually, but this trend is unlikely to change any time soon).
I made some classic era armour and a weapon and had them upgraded to level 65 gear. Useful for leveling characters. However the free gear upgrade made the old upgrade tokens useless, the new one is useful however and for sale by vendors.
There is also transmogs. For example the Green Iron stuff look nice but the chestpice require leather piece as a base. A hideously overpriced leather piece.
I keep older reagents that can be used to make things I want like mogs, pets or toys, but other than that I get rid of them. I sell off what I can and delete what can’t be sold.
Once my current DF professions are maxed, I don’t keep the stuff anymore (or continue gathering). Selling it on AH is where I start, but if it doesn’t sell because so many people are trying to get rid of stuff before the TWW, I end up selling it to a vendor.
if you are an engineering keep the stuff to make the bolts you can scrap them for profession skills and sometimes a page to learn new things
Sometimes the secrets they put in the game require mats from old expansions.
A small example: there’s a Shadowflame toy you can loot from a chest in Zaralek Caverns if you’re wearing an Onyxia Scale Cloak. If you didn’t play during Vanilla or threw your cloak away you’d need a new one made which requires Vanilla era mats.
If it’s not taking up needed space in your bank no harm in hanging on to a stack or two of the harder to obtain ones. If nothing else you’d have an easy source of gold if something comes along to drive up AH demand for them.
