Might as well do upkeep on my professions, but how do I even now i’m caught up on my Mining? Any addons to track that? etc.

I use a weakaura to do it, though there’s probably a dedicated addon in CurseForge if you don’t already use weakauras.

Funny enough I do have that one.
“Catchup knowledge for crafting professions is additionally limited by patron order availability” I figured as much.

Gathering is theoretically grindable, though it is not especially great odds off any item, you are theoretically able to go from 0 to fully caught up on mining/herbalism/skinning/enchanting.
Though for both, the catch-up only effects a limited pool, it won’t catch you up on your quests or treatises, only the weekly points available through either work orders (the 2 knowledge ones) or weekly gathers.
