Oof. That’s a BIG question. Let me generalise a bit first.
Power will not be your problem. Endurance will be your problem.
With 600+ gear level 80, nothing in BfA or Shadowlands will be any trouble to kill. You will blow through Dragonflight Mythic Dungeons solo, but probably not all the way through Raids.
You will also blow through all Islands from BfA and Torghast from Shadowlands. It will take some time to get all Islands and Wings to be available and complete, but waiting is not too bad, and they will be not unpleasant runs.
So you could just start cutting through the Dungeons and Raids needed now, as far as you can, and you will need a (small) group for part of the DF Raids. Great. All clear!
All of that you could get through in an easy week, or a sweaty few days. Quite fun!
It’s when you get into the small print that you start to feel the tiny tendrils grasping you.
These are not just meta-achievements, but meta-meta, and meta-meta-meta, so now you get into the Things That Take Time. Like completing all quests, and maxing out all reputations. Not really a problem, but that will take a lot of hours. Which is actually great, if you have them.They won’t be a great deal of fun, since you’ll be destroying everything with your mere presence, but won’t be hard, and some of it will be interesting.
And everything to this point will get you a bunch of transmog, at least, with probably a few mounts and toys and things.
But you’ll definitely start feeling the length of it.
There are also some novelty achievements, like
which are quite fun, but may be frustrating to get the last few difficult bits of. Which is satisfying in its own way. But they will take quite a bit of time as well.

And then you look with despair into the Depths Of The Abyss, with sub-sub-sub-achievements like

Simply hearing the names of those two makes strong men break down in tears. You thought We’re Gonna Need a Bigger Bag was bad? /shudder
Abandon Hope, All Ye Who Enter Here.
These Final Circle of The Abyss achievements are about completing all World Quests, or Rares, or Items, in the level-cap areas of each of the expansions. And they are up, or available, certain days, or parts of certain days, or when Blizzard’s RNG machine feels like it, which you will find it mostly doesn’t. There’s one partiucular quest in Mechagon I checked for every day for about three months before I got the variant I needed. (I still don’t have Mecha-Done. I stopped trying.)
If you manage to get all three of these final expansion meta-achievements in two solid years, I will cheer you and your amazing RNG to the skies.
Tips:
If you are really going to attempt this, you will absolutely need a spreadsheet or similar to track what you have completed or attempted or checked today, and this week.
This will be especially important if you are trying all three. You will probably want to leave at least one alt in each expansion - travel in Shadowlands is SO cumbersome! Each alt will check for the presence of rare rares and quests each day.
Find and Bookmark all the relevant Wowhead guides for each achievement.
