Hello, I am coming from classic wrath. Given I basically reached the point of nothing else to do, I moved to retail…and I am shocked at the insane amount of fun I am having. It makes me want to relieve all of the content.
So my question is can I? I heard of chromie but I don’t know the do’s and don’ts of it, I go to it select each expansion and do all of the quests regardless of my level? They just threw me in BFA and I don’t want to run that story yet.

Yes you can play all the content. After one Chromie time, or part way through it actually, you will reach the pre current expansion level and get called out or sent to the new material but you can always go back and pick up where you left off.
Since you will have a hearthstone set for near where you were playing that should be easy.
You won’t get much in the way of XP, maybe 10 points at a time, but you can just ignore that and keep playing. It’s best when you go to each next expansion to go tell Chromie what you are up to so she can put you in that time zone. It has to do with the dungeons you see.
Welcome to 2024! It’s good here, there’s been many game changes and improvements since Classic 
When you go through chromie, the content you select scales to your level. So if you’re 19, everything will scale to level 19, then 20, etc.
There’s loads to do and collect c: It’s fun imo to go through older content and collect appearances, toys, pets, etc.
