I was wondering if there are in-game settings, aids, or otherwise you use to interrupt? Because I find it nearly impossible to tab target my way around to select the proper mob before it casts whatever spell/ability.
Furthermore, I can not for the life of me click on a mob in a sea of sixteen+ spinning flailing enemies amidst particle spam and other nonsense.
Are there any tricks you use?
I use plater to organize the nameplates and put cast bars on them; so I can see what they’re casting, at whom, and what their spell CDs are.

How does that work? Does it just list mobs in the pull in the same format each time?
No, it keeps the nameplates from overlapping and pushing each other around, so they’re a lot more static, but not perfectly so. They generally stay pretty close to the mob in question. It’s way easier to select them that way mid pull.
There’s a lot of setup to get it to do these things, you’ll want to download either the Quazli (sp?) or the SkillCapped profile to import, that will get you most of the way there.

Plater also colors priority interrupts differently, so its easy to see the important stuff vs the things that dont really matter

It’s not possible to make things quite so regimented, but you can clean up the area and stop the bars overlapping eachother. You can also colour code nameplates based on mob type to better isolate targets you may need to interrupt.
As for handling interrupts more generally, people typically don’t tab target / click on the mob in question during their rotation. They’ll usually either use a mouse over (So the spell targets the mob under their mouse, regardless of their current target) or set the caster as focus before or at the start of the pull and then use a focus interrupt macro to stop the cast.

In the options setting, under combat you can take mouseover casting. This way you can hover your mouse over a mob and cast on it.

Don’t do this. This enables it for everything which leads you to hitting stuff you weren’t supposed to very easily.
Instead use macros for specific spells you want to have mouseover functionality.
