Wowhead, which I've come to trust as only misinformation and bull****, shows a map of Spires of Arak with points all over it. Absolutely no indication of what I should do. So I go to the comments section hoping at least one person also noticed this...flaw...and decided to offer some information.
Someone did, claiming that you must harvest Timber (medium trees). Yet I've only found two in about thirty minutes of play, one of which was being harvested by another player.
Am I missing something? Or was this quest designed to take up massive amounts of time? Is this quest required?
The quest is not required but it will enable you to upgrade the mill. You can turn on node notifications for timber on your minimap which might help you find the timber you need. By the way you have to harvest timber in a number of locations, not just Spires of Arak. As I recall, if you harvest enough timber, the trees you need to kill show up and drop the quest items.

Yeah but in Nagrand (only place I've tried so far as I am finishing a few things there as well) seems to have almost no medium timber. And the one I harvested didn't yield anything.
The other areas I noticed medium timber much, much more. But maybe that was because I didn't have any mill at the time and kept realizing I missed out on another tree that would yield GRs.
As I recall you may need to harvest more than one for the target to show up. It's random.
It can take quite a while for the targets to appear. As stated, it's random, and sometimes you can get very unlucky and harvest tons of trees in the zone before you finally encounter the enemy. Just keep trying!

Actually, wowhead is VERY accurate. They get their data from people running their encounter utility while playing the game. It records every sighting of something and everything it drops each time it's killed.

As others have said, need to harvest from Medium trees for any chance at an update. I too spent a lot of time trying to complete this quest. I had very bad luck. Good news is, I stuck with it and eventually completed it.
