Figured I’d go for another thought-provoking fun-thread 
If you could be any playable-race and able to choose your faction (Like Pandaren & Dracthyr can) — What would it be, and why? 
I’m confused. Are you asking if people would choose a faction regardless of race, or if players would BECOME a race and choose whatever faction?
This part caught me off.
If its the second case, I would no doubt be a Mechagnome IRL. You get cybernetic enhancements.
Already playing it on most characters; Draenei on Alliance.
Draenei are the coolest, and Alliance doesn’t live in ugly mud huts.
Alliance, Vulpera, Paladin.
The Alliance has access to the basic two handed sword from Exile’s Reach. `https://www.wowhead.com/item=175166/expeditionary-greatsword which goes great with a lot of Transmogs. Alliance Transmogs in general are Knight themed, which I prefer over the barbaric might of the Horde.
Paladins are cool, so are Vulpera.

nightborne alliance
As they are, because this idea is dumb and against what this game is
goblin on the alliance. why? i love’em. they’re my favorite race. and the alliance is where all the fun/my buddies are! …i’m on moonguard, so… that’s another reason. 
also vulpera. same reason as goblins, i love’em. though, mostly cause i thought back in bfa, that the alliance was gonna get vulpera… boy, was i disappointed. 
I would be panda on both factions because pandas are cool and make me happy nd I want to spread that happiness with healing, alchemy, and cooking to all my friends. And my character sees people not flags. 
Alliance Tauren
Horde Dwarves
Why? Because.
I’d be alliance orc warrior because I love Stormwind and alliance cities. Being a warrior …orc is a suitable beefy race for it.
The uh … First one? 
However for the sake of enjoyment, now that you mention it: Porque no los dos? 
Well there’s no need to be rude.
… Plus it’s hardly against what the game is: The races are presented to what faction the story aligns them towards.
Heck in ‘Midnight’ we could see Blood Elves & Void Elves become neutral – abled to pick between what faction they feel suits them best. 
Oh, what a dream come true this would be! But may I name more than just one?
First off, I’d leave one Goblin with the Horde and sneak another one over to the Alliance. The world could really use more Goblins, don’t you think?
As for my Dark Iron Dwarf, I’d definitely ship her off to the Horde, don’t they just fit the vibe perfectly over there?
I’d bring my two Tauren over to the Alliance. I think the environment suits them and my characters would lend the Night Elves a hand, especially after all they’ve lost.
And my three Vulpera? I’d bring them to the Alliance too. Just imagine how cute would a little Vulpera ship be, docked in Stormwind’s harbor?
Finally, I’d send my Worgen rogue over to the Horde. Let’s just say he’s not the biggest fan of Genn, hehe.
Blizzard would make a fortune off this option, I’d bet.
I really like my Worgen druid. I’d defect her to the Horde.
Oh, I almost forgot about my Lightforged Draenei! I might just bring her over to the Horde as well. A little shopping spree in Silvermoon sounds delightful, hehe. It’s a real shame that WoW still imposes so many restrictions instead of letting us freely decide where our characters belong. 
A touch of freedom would make the game so much more fun.
You might like playing the tabletop version called Shadowrun. It was a D&D based game set in our current time were magic and mythical creatures returns to our world and people would use cyber implants to enhance themselves as well.

Goblins.
Goblins, pandas, dracthyrs and Earthens should all be Neutral and free to go to any faction cities without triggering wars
Honestly I would had loved it if one faction was more aligned to X cosmic alignment and Y faction was more to the other. 
As it stands though, Alliance hold kingpin infused-races of both the light AND the void … Yet another factor to why people tend to suggest there’s a lot of bias towards favouring the Alliance.
