Random thought for a hunter backstory is that he’s a bounty hunter specialized in druids. Keeps their furs as a trophy.
But that kind of doesn’t work if they would revert to their humanoid form upon death…

Maybe? As far as I know, the way shapeshifting work is that it is more like a “shell” over your true body, rather than you actually completely moving your organs etc. Not sure how that works for bird form though.
Seeing how anytime a druid dies in game, they revert back to their humanoid form. I’m going to have to say yes, they do revert and thus getting said hides are nearly impossible?

Easy solution: just skin the druid alive while in its form!
He isn’t THAT cruel… I think. Maybe. 
Could always say your Hunter is a bit of a scientist/engineer and created a “anti form reversion syrum” that he equips to his ammo to keep them in whatever form they where in last. Or something.

He’s a survival hunter. but still, those do have bombs and that sting and such. It could work.
I think there are a few crazed druid NPCs out there that keep their forms after they die, but I could be mixing this up with the few crazed Thornspeakers in Drustvar. For the most part, druids shift out when they die. Maybe he can hunt crazy wild druids?

Players do but NPCs don’t, which is a bit weird.

Player druids do. Some npc druids do not because Blizzard is lazy and only named the bear/cat a druid. Oddly Worgen don’t revert to human form. Which im ok with as that says yo me the true form of a Worgen is that they are no longer human.

In Vanilla druids used to just stay dead in whatever animal form they were when alive, it made it very difficult for some healers to find their bodies to revive because they were mistaken for pets. I’m still mistaken for a hunter’s pet when in owl kitty since Legion, so that can still be a problem sometimes.
As for NPCs if you ever visit places where there are dead druids, most of them are still in kitty and bear form as corpses.
