As attractive as many of the portals are, with everygrowing list of them, it would be more logical to have something like one portal, with a control panel you click on to set the portal for where you want to go.

Id say nay.
In terms of a mage. If you have portals you use often. Its easier just to drag and drop that one portal on your bar vs fighting a ui.
In terms of a portal room. Its more visually appealing than 1 portal with a ui.
There are dozens of mages across the land whose job is to keep those portals open 24 hours a day, seven days a week. Why do you want to put them all out of work? They’re just trying to feed their families.
How we gonna play portal roulette if they change that!?
Why though? It just takes a few extra steps to walk from the caverns of time portal to the Jade forest portal in the SW or Orgrimmar portal room
Oh just a thought. Other games have a similar system: ESO you just click on a particular thing (the name of which escapes me) and choose on the map where you want to go. Its a lot more efficient.
Totally agree a single portal is more efficient, but there is something enjoyable about seeing all the portals/traveling to a particular one.
