Well, i got a 207 one-handed weapon for my tank on the Vault 207 weapon, my second weapon as a fury now is a 158 2h weapon, this is the case where i should mix?

No, you should never mix, you won’t get the bonus for either passive if you do.
So, should i use SMF 207 + 171 or should i use 2H 194 + 155
Sim it, but my guess is SMF with the 207, since MH dps > all
How do I sim it tho?
For what you want, click on gear compare. If you dont have the simc addon you can just armory yourself to load up your character.
Then go down some more and input what you want to sim against what you are wearing right now, Remember to set the item level and the enchants on the stuff you are imputing then click compare items at the bottom.
Be aware it might take some time as there is usually a queue of people who are simming their gear - its done that way so their server doesn’t get overloaded and crash.
*Note that the normal setup includes raid buffs and even heroisim/bloodlust over a 5 minute fight so dont be worried if you arent doing your simmed DPS in most fights. And that the basic set up is for one target so some trinkets might be better for aoe but doesn’t show on the sim without changing things.
TG and SMF are very close to each other to the point that you’ll generally just use the better set of weapons. (Main hand wDPS is the biggest damage factor for a Fury warrior by far.) Generally, people go for TG for the larger stat pool, but this is a min/max for bleeding edge progression.
I still get laughed at and questioned over running SMF when I simply haven’t had a comparable set of 2hs in months.

Dont overthink it right now OP. Run 2x the highest ilvl weps you have of the same type either 1h or 2h, not one of each lol.
You have an entire expansion to get better weps and min/max but, if you arent running endgame content, keep it simple.
