It certainly adds to the difficulty and it is somewhat expected in a mode that scales up to the infinity. Interrupts are up to the devs how many they want per encounter. But I like the current iteration, but wouldn’t mind if it was changed.

Cocoon isn’t a tank defensive. Most tank busters require a tank defensive, like warrior’s shield block or druid’s ironfur, to reduce its damage. Just cocooning doesn’t activate the mitigation the tank would otherwise have so the tank will still go splat from taking full unmitigated damage through the absorb.
I’d rather have the 8300000000000000 things hitting the floor than the 45000000000 interrupts. I don’t know how anyone gets hit by swirlies now that they’re neon painted everywhere.
Infinite scaling means this eventually happens to even an auto attack.
If you and your group reached your collective and/or personal skill ceiling, then pat yourselves on the back and be done and move on.
It is dumb to expect that you can continue to push indefinitely.
I think the point about abilities that are one shots is they are either supposed to be avoidable or able to be mitigated in some way to not kill you. If you think you aren’t able to handle it appropriately then you are probably not approaching the mechanic correctly. In this case the point of the mechanic is that it’s a check to make sure the tank is using his defensives properly.
One shot mechanics are basically pass/fail mechanics; they’re not inherently good or bad. They’re bad when a fight has 20 of them, and conversely it might be bad if a fight doesn’t have anything like that because it might mean the fight never really threatens you. Those fights have to be designed correctly in a way that will overwhelm you for continuous failing.
This is kind inherent/inevitable by definition of infinite scaling.
Mythic+ has infinite difficulty. Everyone would get one-shot at some point. If this is not true, somebody should have already done M+99.
