Open the Adventure Guide then the Raid tab at the bottom. Use the dropdown box on the top right to select Shadowlands. This was make a new Loot tab visible at the bottom, select it. Now on the top left is another dropdown box, change it to Item Sets.
You’ll now see the current tier for Dragonflight along with the other pve sets.
