I’m having trouble completing a lot of older content achievements because I need the bosses to trigger events during the fight but if i hit the boss I One shot kill them. How dose one do a lot less damage as to not kill the boss right away?

Soft foam sword toy is a good option. Usually one on AH.

You can buy the Soft Foam Sword from any toy vendor in your capital cities.
There are restrictions regarding its use though. It cannot be used inside instances nor can it be used against mobs that are non-trivial to you.

You have gear.
Remove it.
You may have to level another character and stop just after it hits the legacy buff threshold. For WotLK bosses get to level 35, etc. This might not help if you’re trying to do meta achievements though, which usually require all credit to be on a single character.
Maybe warbands will eventually expand all achievements to be truly account wide…
This is the only situation in which I’ve ever wanted rogues to have a taunt, haha.
I agree with the option of removing most or all gear, and swapping in super low ilvl weapons. I’ve had occasional success with that.
Foam Sword doesn’t work inside instances, which is something that maybe they could tweak. That seems like something achievable. It’d be a great option if it worked all the time.
They only other option I can think of is to bring a friend who plays a class that was a taunt or other non-damaging opener.
Have you actually done any old content ? Why bother replying if you clearly have no idea what you’re talking about.
Even with no gear on, with rez sickness, you still overkill old content mobs by millions of damage.
