How do you interrupt with a blood DK?
Use your interrupt spell? What the hell is this question.

I mean which spells do I have that can interrupt? I know I have mind freeze, but are there any others?
No it’s just that one. The vast majority of classes only have a single interrupt spell. There are other tools in your kit to stop casts, but in terms of technically interrupting you just have mind freeze.

What other tools? Are there any potions or other consumables that you know of?
Tauren Warstomp to stun momentarily (though not good with raid bosses).
Night Elf Shadowmeld , though this causes aggro issues in 5 mans

like i dunno if it still works but i used to death grip people to make their cast fail if my stun and interrupt is on cd
i wasn’t aware any class had more than 1 interrupt spell, why do you need more?
Generally speaking potions are used for throughput. The only pots that aren’t used that way are move speed and invis pots. So no, cc is just about your characters kit, not consumables.
I am soloing the Tomb of Sargeras raid on normal, and I’ve killed the first 6 bosses. I’m stuck on the Maiden of Vigilance. When she enters phase 2, she casts Titanic Bulwark, which prevents interrupts. When that comes down, I have to interrupt Wrath of the Creators because it’s an instant kill. I can’t determine when the Titanic Bulwark is down, so when if I use my Mind Freeze too early, it’s on CD, and I die. I wanted more ways to interrupt her, so if my timing is incorrect, I can just keep spamming interrupts until one gets through.
You have 1 actual interrupt. If you use Strangulate, Death Grip, Mass Grip, etc. to interrupt, the NPC typically re-starts their cast right after. Mind Freeze interrupts spell casting and prevents any spell in that same school from being cast within 3 seconds.
If you need precise timing on a boss mechanic, might I suggest downloading DBM and separately the module for Legion raids?
That or you could also find a weak auras string for that particular mechanic.
