Can you equip more than one Collector’s Carryall on a single toon?

It’s unique. So, you can only equip one.

I’d also note that the tooltip says “unique” and not “unique equipped,” which means once you have one on your toon, whether you equip it or not, you won’t get another one to drop. And since it’s BoP, you can’t get one and trade it to try to get another to drop on that toon.
This is why, once you get the bag on a toon, best to switch to another toon to do the event so that the other toon can try to get the bag. The other items and cards are account wide, so that doesn’t hurt you as you collect things or do the achievements.
If an item says “unique equipped” then that is something you can only equip one of at a time, so some DF rings are like that, for example. So you can have one equipped and one or more others in your bags, say one that has better stats for raiding and another for mythic+, so you can swap them back and forth for the content you are doing at the moment.
