Same could be said for other Dragon aspect elven form I guess, but so far we only see a canon appearance of Deathwing in human form, the same way he has been on Cata onwards, 20000 years ago.
Maybe the Bronze Dragonflight showed the other flights all the future major races.

Humans are a titan-influenced mutation of a race, could be more that we are made after his image than he for ours.

Problem is that human came from curse of flesh which is an old gods product. He could have had Vrykul appearance.
Most likely answer is it was done to fit the Onyxia SW lore and they wanted Daddy to also be a human visage.
Keepers created the dragon aspects and have humanoid forms.
Could be that his visage was inspired by them instead.

Probably vykrul influenced his choice they would have been known up in northrend as well as their offspring becoming smaller “humans”.
