I think they should add a hide Shoulders alongside helm and clock for classic.
If an option is already available (besides unequip) please let me know. I have looked at addons have not found one yet.

nah. slippery slope. soon people will want the option to hide everything. helm and cloak make sense since some people like to see their character’s face and backside.
Transmog will definitely give you what you want, not sure what iteration though like Cata or a future xpac
