Ive been bouncing around on the race of my priest. I cant seem to decide which one I like the most. I love the idea of Pandaren but a lot of armor looks quite silly on them. Night borne are great but they arent getting anything come SL. Blood elf is a good option though they are a dime a dozen, and Undead is functionally the best choice for me but not my favorite look.

Just play whatever race you think looks the best, IMO.
You can swap races on PTR to test them out a bit.

The only thing really keeping me from going Nightborne atm is the horrible lack of customization options
Shadow Meld lets you cheese boss mechanics and instant out of combat in PvE. Great for questing when you just want to grab what you want and go. Good for PvP for setting up ambushes or dumping the mage about to pyroblast you before they finish their cast…
Also can be used for wipes inside of dungeons/raids as well as long you’re the last person alive and time it right so you can drop combat and res everyone.
Only other thing I could think of for alliance is probably Void Elf. No interrupts while casting is pretty useful. Humans are also good if you care more about PvP because they get stun removal.
Undead. You can change skin look options and not have tattered cloths when prepatch hits.
Pandaren is fun, bonus to any food you eat.
Worgen gets speed buff which is nice because priest mobility can be bleh ( esp without feathers)

Blood elf for looks. Yes they are a dime a dozen but there is a reason why, they are simply the best for priest armor.
Goblin for the racial. A goblin-jump is just so amazing for a priest you’ll regret not being goblin again if you switch off it. They are tiny, you barely see armor and the proportions are crap but small price to pay.
You might consider female Orc as a more exotic alternative. Not only do most armors look nice on them, they benefit from the mass of new customization coming with prepatch, and they have decent casting animations. And supposedly their racials are good for PvP, but I wouldn’t know. Maghar are fine too if you must.
But Horde side? It really is BE or bust if we’re being honest. They look so so good and they have excellent animations (minus the death animation…that’s…special).
On the off chance you’re open to Alliance possibilities, I think female KT look very good as Priests: they have excellent animations and with their heritage armor you can be a Pirate Priest! It’s cooler in Shadow. And you can punch anyone you dislike really hard. It’s very satisfying.
I went goblin. I really like their heritage armor. The females look good in almost all the sets I use and there are some new customization I made in ptr that I’m really enjoying.
Head cannon is super important to me, I don’t love the greed underhanded aspect of goblins but i occurred to me that goblins can seek and hoard other things besides gold.
I am a Goblin priest, I hoard books, make scrolls and will gladly keep you alive, That is… if you have something new for my collection.
Just switched from UD to Zandalari myself.
The voodoo priest was always a badass concept and the amount of mogs really opened up - upright trolls look great in most sets.
I was excited for the Undead customization changes, but on beta the fingers and toes still have bone tips that shred gear and the cape still tears as if the spine is still showing. After years of just wanting bone-less, upright UD it was kind of a letdown.
As a nightborne priest armor looks good on them, however, they just feel clunky. Now with them getting zero appearance update, which is sad because now I don’t see the draw.
Undead a new options seem really cool to me and they have been a favorite for a long time except I hated the look of the bones. Why would you expose the bare bones. Wouldn’t you want those areas covered? I guess I never saw the logic.
The trolls look fantastic. The bone paint would look great on a shadow priest
If I was going to go alliance I’d be drawn to either the human or night elves. I love how they look. The new nightelf options look more like a nightborne than the nightborne do.
Belf master race. i know goblin is the better choice but i really like the look of belf also arcane torren can be really useful.

shadow priest forsaken next xpac is just… so aesthetically pleasing.
troll is very nice as well. both males and females got that skull face paint.
if you want to swap factions i think night elf is mad cute.
I have a love hate relationship with nightborne. I want to love them but like you said OP, their lack of customization options plus the bad hair textures really turn me off. If I were to play horde right now I’d probably make an undead priest. I really like their new customizations.
Absolutely. Honestly, once nightborne get some new design options and the model gets cleaned up a bit It’s an easy jump for me.
Once void elf was confirmed there could be no other option for me
