I may not be able to solo a healer, but I can definitely make them sweat when I pop CDs solo on my Enhance Shaman. 3v1, DPriest or not was definitely an issue on the DPS end of the stick. 
I think in that situation it should be about controlling the priest rather than trying to outright kill. Using CC as much as possible to cap that flag. Going with the right comp to do that CC would be important too.
Ignore skill issue comments, most of the people saying that just like to blow their own trumpet. It can also come down to gear, if the priest is fully decked, it is probably a lot harder.
CC for the win IMO.
Disc is broken yeah.
And even after the nerfs you literally cannot tell the diference between pre and post nerf.
A good healer, define a good healer? Way OP because of balancing issues and Uber geared? Because Disc has been OP for quite a while now.
Bad dps could be because they are playing to get gear, there are so many scenarios.
It’s impossible to tell via text on a forum what was truly going on.
I run into this all the time. I will be at a flag with a druid screaming at them to press clone and they are trying to kill a healer or a tank. I call this arena brain honestly. KILL KILL KILL.
