Ignoring the lore reasons( I think they speak for themselves)
If any race could be any class all we would see is more Horde players switch to blood elf and Alliance players switch to void elf, we need class restrictions for balancing.

Beyond balancing, it just makes some stuff more interesting.
The moment you say “everyone is everything because everyone are just individuals” you kill the races cultures and the individual cool reasons why they might be an specific class.
Kul’tiras druids learned from Vrykul
Night elf mages came from the shren’dralar
Draenei were already monks but learned a new style from Mojo stormstout of all people.
blood elves followed illidan and learned his path to become DH.
mag’har are priests because it’s a remnant of the shadowmoon.
All of these would be ereased if you just say “EvErYonE bE eVerYthIng”

No it’s not a good thing at all. I for one, only ever had a blood elf because they were the only horde race that could be a paladin at the time. Now I don’t need one at all.
I really just want a Vulpera DH and Druid ffs.

It would be nice if humans could play a define set of classes as well as the other races. Just like underwears, one size doesn’t fit all.

When their "individuality " completely disregards the lore and their asking Blizzard to make changes just for them so they can feel special, its not right.

Frankly I wish we got more flavor text with the classes we have now to make them more unique. Give Night Elf Priests some flavor text and change the name of the spells to be Elune and moon based to show that they are Priest/Priestesses of the Moon.
I’d like to see stuff like that.

But they’re also the ones who have laxxed on the class restrictions and have added things like the fairy suit, yeti suit, and fish weapons.
If they didn’t want this stuff, they wouldn’t have added it

I think WoW will be a great game if we make it like other generic korean mmos and throw 20 (?) years of world building out of the window.

You’re the type of person Blizzard doesn’t need to cater to. IF we just completely forget lore then why have the game? It isn’t WoW anymore it’s just generic fantasy game 500
