Curious how it might effect the story since evokers have a completely different start than non-evoker dracthyr.

I’m not exactly sure what your question is. You can’t “class change” your character; a Dracthyr Evoker will never not be an Evoker.
If you’re asking about other classes for Dracthyr, like a Warrior, then their starting experience amounts to very little. You are woken up in the vault room, you glide down to the bottom floor, and then you take a portal to your faction capital. Emberthal gives a unique voiced dialogue for each class, but that’s it.
