It was pointed out to me recently that my two weapons and evidently a trinket of mine because they are strength and intellect that they are no good for me. I get that we don’t use strength weapons yet I haven’t gotten any better ones to drop for me in dungeons yet or in world content.
Am I wrong in understanding that under the current gear system if an item doesn’t have the right stats on them they are still ok to use until better ones come along? Because I always thought they were.
Also, anyone point me to where I should look; I have not had much luck getting maces, and axes with good states to drop. My blacksmithing is still too low to craft them. Just asking for assistance.

Easiest way to get weapons in a pinch is PVP. Either through honor or bloody marks in WPVP.
Yes, you are. At least in regards to main stat (strength/agility/intellect). Weapons have a ton of stats on them and the main stat is the most valuable stat for every class. It’s not worth dropping an entire weapons worth of main stat. You want one handed weapons with Agility on them only.
You look like you can probably do M0 dungeons, although I can’t imagine the stat-less weapons (and dead trinket) are great for DPS, but that’s probably still the best bet for getting gear. Running with people who have good gear and the same drops you want helps a lot. You can also use the dungeon journal to check where weapons can drop. Neltharus, notably, has two weapon drops for Enhancement Shaman.

PPS: Your Intellect trinket only triggers off of Spells and not Abilities which means it won’t trigger of some abilities like Stormstrike.
It’d have to be a fairly massive item level difference to overcome the agility loss. Your prior weapons would have to of been like item lvl 50 for it to make any sense to use strength with the secondary stats. Even if you drop your two 379 ilvl weapons for 340s you’ll perform better. Strength does absolutely nothing for you, so your weapons are currently acting like rings for you - which hurts a lot.
You can either do pvp, world quests (again even a super low item lvl - any will be better, and/or farm the invasion events for elemental overflow and buy 359 ilvl weapons from Mythressa in Valdrakken.
A lower lvl weapon with your primary stat is better than a higher level one without it. And the difference is huge!
