Just a bit of flair, but raising an undead as frost seems out of the aesthetic a bit. Would you be down for a glyph that changed the ghoul to a frostbrood drake that fought alongside you? We already have a welp form and a wyrm form. Seems to go along with the “I bring ice, and undead dragons” motif a bit more.

I like your idea, but I feel raise frostbrood drake would be asking a lot. Perhaps something similar, but tone it down a bit-like frostbrood welp would be more reasonable.

No. The kind of weird exclusion/spec specific restricting of abilities that make Death Knights, well, Death Knights, is what ruined class fantasy in the first place. Raising a ghoul as a big frost-empowered necromantic death warrior feels right. Like the white walkers from GoT.
A baby whelp would be way too cute and cuddly.
I would use a glyph to make the ghoul more icy, or maybe make it an icy skeleton.
