Feast tables and the steaks!

Look, do you know how long those feasts sit in your bag before you eat them? It’s a food safety issue. Gotta grill them according to code, otherwise Nomi gets on our backs and you definitely don’t want him to do it.

I like my steaks well done and not mooing.

Everyone likes their steak, the way they want it. I have no problem with that.

I appreciate that, I have gotten some real crap over it over the years, I always try to explain that it would be like me forcing them to eat it well done.

It’s not right to tell someone how they eat a steak that it’s wrong.

I like my meat very well-done too. I’m a texture eater and tough texture pleases me for some reason. :dracthyr_shrug:

Used to get crazy arguments from my dad about it. “You’re wasting the steak!” he would scream. But, dad, if I’m enjoying it, then it’s not waste? You eat yours your way, I eat mine my way. Zero loss here bubba.

I used to eat my meat rare, but it stopped agreeing with me. Now I cook it medium.

It is possible to make a good well-done steak.

But it is very difficult to ride the balance between leather, and juicy well-done.

You have to sear it at a very high temperature first on both sides, then drop the heat and flip it frequently to prevent it from burning. Basting it also helps a great deal, and you do not cook it until it is well done. You pull it off the pan before it reaches that point and let it rest up to well done while covered with foil and smothered in butter.

Even then it is a difficult balance because if you don’t manage the heat right you’ll either burn it, or the heat won’t be enough to render the fat and then you’ll get raw fat and chewy leather meat and it’s just awful. The absolute worst of the steak world.

But with luck, experience, and care you can make a well done steak that is just as good as a properly done medium steak.

I’ve only done it twice, and refuse to risk disrespecting the cow that way anymore.
