I’ll just go with 11.x Arms and 11.x elemental. Old timey specs, probably old school survival and unlimited soul swap affliction.

I’ve played thousands of hours and played all spec except Shaman.
DragonFlight Season 1 Protection Warrior was fun! maybe because it did good DPS but all I remember is having so much fun before the nerfs.

Shadow imo is the coolest spec in the game.
An army of apparitions floating off to murder your enemies is so cool.

Right now, Assassination Rogue. I don’t even know why, I used to hate even the idea of playing rogue. Never played the class or similar in any game. But damn it feels good to me right now.

Oh, if I was picking another it would be Mage in Classic. I have never felt so cool as a Gnome.

Xx.x.x ret pally. Always has and always will be my main. And was mostly always human for initial leveling. Wasn’t my first toon but was my first to max during every expansion. 
Discipline Priest.
When you’re in the zone, it’s so much fun, destroyed many Alliance on my Disc Priest, no offence or anything.
Me too! I levelled a rogue to max for the first time ever (played since vanilla), and can’t put it down. Assassination is the only spec I have tried so far, but PvP is a whole new game now. I cant believe I waited this long to pick one up.
I tend to jump around a lot. Frost DK, Havoc, Ele and Destruction are my usual go-tos.
All time favourites though (i mostly just PvP):

Druids before they were split into four specs. I loved being able to swap back-and-forth between my bear and my cat.

Ret paladin. I think its best form was in dragonflight after the early rework. It’s still great and largely the same now, but the longer cooldown on templar strikes has just added the potential for downtime that wasn’t there before. So that’s a shame.
Current enhance shaman.
Melee shaman with 2 charges of Stormstrike, Tempest, Lightning Lasso, Thunderblast and option not to take Lava Lash? Yes, please!
The only thing that’d make it funner is having an updated version of chain harvest back in game.

i digress on tww arms in legion you didn’t need overpower stacks to hit big mortal strikes and colossus smash was separate from warbreaker.
I have played this druid since… BC? I don’t recall. A long time. I won’t stray no matter how bad this class gets. Buuuuuut I gotta say WoD Brewmaster almost did it for me. I absolutely loved it. It had everything I wanted— mobile, strong, entertaining buttons, fun animations, and my monk is a troll so win-win-win.
