I was leveling herbalism on an alt on Whitemane for the umpteenth time, and everything seemed to go so fast with the population decline and a lot of experience with the fastest leveling routes.
That made me wonder what the fastest time possible is, using only your toon and no summoning alts, etc. I’m pretty sure it would be a druid with the pvp set speed bonus, though mage teleport would be nice too. Someone should have a leveling tournament on stream, would be interesting to watch.
Leveling herbalism is one of those things I do by accident (on a druid of course).
I think I would actually watch a tournament because I like when people create unscripted goals for themselves, even if I don’t find the goal personally interesting.

id personally go with tauren hunter maybe (assuming you mean from fresh creation)
S tier leveling speed
+5 herb meaning less dead nodes and failed gathers
access to cheetah/pack early
and pet to distract mobs for quicker harvest.
Gloves enchants + herbalism gloves + the cow racial + druid / hunter for speed.
BiS.
I think on a near dead server, someone could hit 300 within an hour if they planned an optimum route.
