Had an Update when I logged on this morning (oh joy!). Took these images of the process, which took 20 minutes. And all I had open otherwise was my browser.
Surely this has to be some weird stuff going on. I did a speed test and my download speed was perfectly normal.
Yes a lot of us are having this issue. Blizzard, after no help, will refer you to the forums. No fix for this.

That’s what’s happening when you update WoW as well. See that CPU and disk usage? This is one of the reasons why it can take a long time, if you have a weaker CPU or slower HDD/SSD. So it could be triggering thermal throttling for people playing on laptops or pcs with poor cooling, which will slow it down drastically. I was actually kind of surprised to see it using THAT much of my CPU though.
