Mail with attachments have always gone back to the sender… BUT could swear I saw a loading screen tip that implied when they expire, they are deleted… did anything change? Can I count they will be sent back to the character that sent them?
I think they get deleted 30 days after they are returned to sender if they aren’t opened and the item taken.
I’ve lost a lot of mail and here’s what I’ve figured out

Send mail to an alt, do nothing and it gets returned to your main after 30 days. If you still do nothing it gets deleted after another 30 days

Send mail to an alt. Look at the mail on your alt (but leave it in the mailbox). It will not get returned and will be deleted from the alt 30 days after you received it.
Only unread mail will get automatically returned after 30 days.
I don’t think that’s quite right. Mail that’s been opened but left in the mailbox certainly does get auto-returned.
In any case, OP, the rule is (and has been at least as far back as the beginning of Cata) that mail gets returned after 30 days; after an additional 30 days sitting in the original sender’s mailbox, it gets deleted. The exception is mail sent from the AH and the like: if it expires, it’s simply deleted, no return.
That’s a fact. Mail sent to an alt, whether opened or not will be returned to the sender after 30 days.
Mail from the AH or from quests will be deleted after 30 days.
Sending Ice Cold Milk through the mail expires in just three hours.

Unopened mail is returned to sender. If you click on it at all, it’s considered read and will be deleted after 30 days.
Ah, so ya get one auto return then ya gotta go manual…
