The armory doesn’t display evoker stats on their profiles (health, primary stats, and secondary stats) like it does for all other classes.

Agreed. This is a pain.
Every other class in the game can see their stats in the Armory. Evokers are the only exception.
Blizzard please fix.

In case anyone is watching this thread, I just noticed this is FIXED! 
And the name is now the proper class color instead of white
