I did mining and engineering with my evoker and now I’m getting sick of it. I any ideas on what profession to do next?
Herbalism and Alchemy
Generally, I say go with something that either complements the class (for example: mining/smithing on a warrior/death knight), or something that you feel you can make gold with.
If you’re fairly well covered across your account on professions and decently self-reliant, you could potentially consider mining/herbalism on an evoker. Since you’re required to play as a dracthyr, your Soar racial ability can be fairly useful if you blow all your stamina on your dragon and don’t want to be stuck waiting on the ground for it to regen. You’ll still get your various recovery bonuses while flying via your racial, so if you manage to get yourself up to speed, you can usually regain a good amount of that stamina back by the time you reach the next node and trigger your racial CD.
From there, you can just alternate dragonriding and your racial as needed. Just swap to the other when one is on cooldown or you need to recover stamina.
Past that, herbs/alchemy is always a tried and true combo that can help every class to an extent. Doesn’t make the gold that other crafting professions do, but it generally stays consistent over the entire life cycle of an expansion. Worst case scenario, you won’t have to blow your own gold on potions.

I can make my own armor and my own potions 
I went with Jewel crafting because I thought it add more interactions to the Onyx Annulet ring!
Imagine how disappointed I was when I found that was not the case in the slightest!
I still stay with it because I already had the other professions on my alts… but anyway I guess you could try it since you already have mining?
