When it really comes down to it, I don’t think that players would care if they can’t actually wield a 2h weapon. But, to have the appearance of using a 2h weapon would be very welcome for Enhancement.

For me, personally, it’s two things:

1. Even if it means less overall DPS during the course of a dungeon or raid, I love seeing big crits, and the crits you could get with a 2-hander would be bigger than what you would get while DW. Sure, the two individual crits from your DW might add up to be the same or even greater… but it just doesn’t feel the same (to me).

2. Like you said, the appearance. I have been able to somewhat get around this by having the Doomhammer equipped and transmogging the offhand into the smallest, most basic fist weapon I have, then tossing the… sunfire (I think?) enchant appearance over it. It’s not quite the same as using a 2-hander, but it’s getting there.

The real big downside, weapon appearance-wise, is that there are a TON of amazing 2-handed mace designs. The 1-handed mace designs are garbage by comparison.
