What prof is better for a paladin? Pros and cons of each?

Engineering is better than everything else if you pvp.
If you pally tank, engineering is your ranged pull.
There is no particular advantage to Blacksmithing in Classic – the “bind-on-craft” recipes were introduced in TBC. Tailoring has “bind-on-craft” chest pieces for Mages, Priests, and Warlocks – but Leatherworking and Blacksmithing do not (so sad). As such, whatever you may need via Blacksmithing, somebody can craft for you.
Engineering fills in for many Paladin class weaknesses (in PVE and PVP).
