Is it possible to get the engineering equipment that requires a level to make and then switch my professions after I have gotten them? Was curious if it’s possible to get those then have an alt with engineering trained for the other items that can be made so I could have a different profession on the main.
No. You need engineering leveled up to use every single item outside of Ez-Throw dynamite (which is the lvl 1 dynamite that does 40 damage).

Alright thanks wanted to get an answer. Figured it would be this way, but was worth a shot.

As said before, everything but ez throw requires engineering.
Also certain classes cough Paladins * cough* needed it to fully function as anything more than a healer.
you also dont need engineering to use goblin rocket boots
Goblin rocket boots can be used by anyone. I have a pair I use to chase down hunters.
