Engineering - how does relearning things work if I drop it and come back?

Considering dropping Engineering, since I’m kind of underwhelmed by it so far in Dragonflight. I primarily took it up a few years ago because of all the nifty toys – MOLL-E, Loot-a-Rang, and all the different Portals, which have all been useful.

If I were to drop the prof and come back to it someday, would I still have all those toys learned? And would it just be a matter of skilling back up in the relevant expansion profession paths (i.e. Cataclysm Engineering, Draenor Engineering, etc.) to be able to use them again?

If you drop a profession in Dragonflight, you lose everything associated with that profession: all recipes, knowledge points, etc. Since knowledge points are heavily time-gated, it is definitely not worth dropping a profession if there is the slightest possibility of picking it up in the future.
At least - this is the current state of things. Who knows if they plan to introduce some kind of catch-up mechanic in the future.

Plopmcdurpin seems to have not been exceptionally thorough when reading your post. The toys will stay to be accessed later as soon as their requirements are met again, they’re part of the toy collection and can’t be unlearned. You can actually use them on any alt that has the required engineering level as well. Also note that goggle transmogs and the flying machine mounts require engineering skill to transmog/use, so if you ever plan to use those, you’d need to pick back up engineering.

You don’t lose spent knowledge points, you’ll pick it up again with exactly the specialization you left it with.
