Playing through older content, I intent to make some extra pocket $ on my way, which is the better profession for that aside from mining?
There’s probably more of a market for using old herbs than there is for other people enchanting old gear. It’s possible enchants will sell for more, but the number of herbs that you’ll actually sell is likely to outweigh that
I’m not 100% sure, but if I were planning on doing that I’d probably look at the AH first (or download an AH app that scrapes the prices and shows them to you when you mouse over items) to compare enchanting materials to old herbs.
Personally, on my alts I typically will pick two gathering professions, like skinning and herbalism or herbalism and mining, etc. and just sell the raw materials I collect on the way up. I have my “main” characters with some crafting professions, like leatherworking or tailoring or JC, but I have way more alts than I do crafting professions so on the tertiary alts I really just go all-in with gathering.
You could do herbalism + enchanting and just DE all the greens you get, especially if you’re in all or almost all heirloom gear. Hmmm, I just thought of that. I might do that with one of my lowbies. Then I could switch from enchanting to something else in SL if I wanted.

I prefer sell materials than enchant itself
it will be more lucrative to gather once you hit 60 than to invest that time in lower content.
Honestly old mat value is probably down from what it used to be since you don’t need to powerlevel old world content anymore to get to new professions. Anyone can make a fresh character, level to 50 and immediately pick up SL professions and level them.
That being said I’d still go herbalism over enchanting since some old content stuff sells well due to being linked to an achievement or mount or whatever. People are still crafting sands or mechanohogs or whatever and selling them for good prices.
Chanting is pointless.
They put level caps on all older chants.
Not sure about potions. Prob the same thing. But perhaps herbs can still be used for something else.
