I am thinking about playing classic, but i am now in my mid 30s with a family. I still keep up with my old WoW friends, but they are also more busy. We really enjoyed doing 5 man dungeons back in '04-'07, but those dungeons were quite long.
Is it possible that we could play together a few hours a week and make progress in a dungeon/10-man over a 2-3 week period, or will the dungeon be reset?
I would like to have a bowling night / book club type of experience with my old friends where we all get together for a few hours a week to work on a common goal, but individually we are working towards whatever level and gear we will need to tackle the next weeks g

Depends on the dungeon and what you’re trying to accomplish in it. Take BRD and Mara for example, a full quest run can take upwards of 4 hours? If you just do a princess run or lava run it can cut that time to a little over an hour if anything.
There are no 10mans in Classic but the 20man instances reset once a week. Most pugs won’t be able to do a full clear of these anyways w/ more time then you. Classic isn’t as favorable to people that have more casual time playing/logging on to find out what to do, versus logging on and heading to an instance. If you log on w/o an idea of what you’re exactly doing, you’ll spend a lot of time forming groups/figuring out where certain quest are.
I think people will figure out ways to not make these runs take so long. I think the key is as a tank to tank left to right. Use CCs on ranges and tank the melee first.
Everything without a raid lockout will be reset after everyone leaves and a bit of time has passed (or you manually reset).
Raids with a lockout will reset after either 3 days or 7 days.
That said, you will be able to do many instances in parts, like BRD doing a Domicile run, vs an Incendius run, vs an Emp run. There’s no “You have completed this dungeon” nonsense for XP or Loot bags, so whatever you do is whatever you do.
I want to say UBRS is treated like a dungeon, so it resets like any other dungeon (an hour or w/e after everyone leaves the instance). It’s not a raid so no lockout.
Raid lockouts didn’t exist til WotLK.
Dungeons are different in the fact that they only reset once people have been out of the initial group that formed it. You can have up to 5 instances per hour so theoretically if you could clear UBRS super fast, you would still have a limitation.
My advice: Just know what you want to do before you log on. If you and your pals have agreed to run a certain dungeon after work it would go 100x smoother then piecing it together on a whim.
