I was looking on the auction house last night to see if there were any weapon enchantments I could use yet and noticed there weren’t any enchantments… did I miss them somewhere?
If not, is it possible to enchant any of my items without being an enchanter?

You have to have an enchanter perform the enchantment on your weapon through the trade window. Generally, they will let you know what mats they have or what you need to provide, and then you provide a tip for their services. Enchant scrolls were not a thing in Vanilla.
You can’t put enchants on AH. You have to go to an enchanter and have him enchant your gear.
In the trade window, at the bottom, there’s a spot that says “will not be traded.” That spot is where you put gear that you want enchanted for enchanters to fix. You can also get rogues to unlock lock boxes this way.
You can do this in retail too by the way and it’s sometimes cheaper than buying the “enchants” on the AH.
The reason they can put them on the AH in retail is there’s an item called a vellum. They enchant the vellum, and then anyone can take that and use it on an item to grant the vellum’s enchant to the item
