Before this last update I could draw and sheathe my weapon with the Z key. After the update my Z key is unbound and I can’t find the option to reassign it to draw / sheathe my weapon as I had it before.

I had the same thing where it was no longer bound.
If you type Sheath into the search bar at the top of the Options panel it’ll come up (heck just She works) and you can reset it.
