First xpac im paying attention to lvling fishing and just been using the basic lvl 1 rod. Is there another one I should be using or are they just for looks?
There used to be fishing rods that had stats on them, would give you a 5% success rate in catching fish, other things probably.
I never used them much. I just use the standard one where you click on cast and suddenly the game gives you a pole.
There are hats you can get in DF that have the fishing stats on them.
Those can be useful. GL.

On the first day of official launch I fished from 1 to 300 with my Shadowlands fishing pole while I watched a Twitch streamer for the mount drop. Took about 3 hours. Didn’t have to move. Did catch a lot of junk but a lot of fish too. I’ll buy a current fishing pole when the prices come way down.
no you should be using a crafted rod - you will get rarer fish if you do

I wish I could use my Underlight Angler on all of my characters. That is the fishing pole I prefer.

What do you mean? I didn’t know you could transmog fishing poles? Will it still give water walking and fish form underwater?

Fishing poles usually drop from the Bag of Goodies you get from the Fishing Daily quests. The Fishing Hat also drops from those bags.
The Ka’luak in Northrend offer a fishing pole that allows Underwater Swimming without drowning if you get Exalted Rep with them. They offer Fishing Daily quests as well.
The newer fishing poles give a bonus to perception, which can help catch rare fish.

At the very least, you can purchase a Strong Fishing Pole from any fishing vendor for a minor skill boost. Costs like 10s. There’s no reason not to use that one.
This is the one I use. The underwater delve is no trouble with that on.
Draenic Water Breathing Elixir gives you an hr of air, and is fairly cheap at the AH. As for the fishing poles. Having the latest and greatest pole from the current expansion allows for you to get rarer fish easier.
