I remember reading somewhere that due to how they are raised into a state of suspended animation, most of them smell dusty / musty like a cabinet of old cloths in an abandoned house.
I doubt I could find the source but they aren’t actually just rotten bodies walking around.
Edit: Never mind, actually did find it, had to google what do forsaken smell like:
“The undead being who stood before the king of Stormwind was shorter than average but otherwise unrecognizable. The beard was gone. Cut? Rotted away? And the hair was dark with dried blood and ichor. He smelled like old vellum: dusty but not unpleasant . Faol had died when Anduin was a child, and the boy had never gotten to meet him.”

This is from the short story “dark mirror” just after Nathanos got his new body for legion.
After winding back through the secret tunnels, the pair traversed a long corridor that opened into the outer ring encircling the Undercity. Entering the common area, Nathanos soon recognized a disadvantage of his new form. Like his other faculties, his sense of smell had grown stronger. As a group of three Forsaken approached, the stench of their rotted flesh brought him near to retching. He hadn’t noticed the scent of death after waking from the ritual, but out here, among thousands of undead, the odor pummeled him in waves.
Nathanos steeled himself until the trio passed, then swore a silent oath that he would never allow himself to be caught off guard that way again.
I think there are some exceptions though, like in the DK starting version of acherus theres a book explaining how to keep your body in good shape and fight off rot, it’s been a long time though and I’m not making a new DK to check.
