For the most part, no, it does not make pally gear. There are rare exceptions, but the vast majority of the gear is strength, stam, +hit, +crit, and avoidance/defense.
If you’re healing and want a profession that provides healing gear, I’d honestly suggest tailoring. Even leatherworking provides relatively little healing gear. If you’re tanking, blacksmithing “might” be worth it for the pure tanking gear, but you’ll need to round out your gear with drops that have int.
Generally speaking, no. Most of your standard recipes learned via trainer are going to be strength and stamina pieces. Most of the recipes with INT on them won’t be available until you specialize (armor/weapon smithing).
Don’t let that deter you though. If you’re looking to go ret/prot you really don’t require that much INT gear so you can use it to supplement what you get from drops/quests. If you want to go holy, it’ll just mean more profits as you’ll be more inclined to sell your crafted items.

I figured it’s also worth adding that blacksmiths can do more than just gear/weapons. They craft several components for engineering and enchanting recipes. You can make spurs that give a modest mount speed increase, weight/sharpening stones for bonus weapons damage and keys to open lock boxes, chests, and certain doors.
