Does any professions help a do the most. Like engineering or alchemy?
I do herbalism and alchemy.
Nice trinket. Also you can make all your potions and flasks. Sell them or use them.
I used to do smithing and mining, but switched at end of Legion. I’ve been happy with the switch.

If you plan on PvPing a lot, engineering is always a very good choice.
Otherwise I’ve always gone with Herb/Alch, it’s generally the most useful profession IMO. Plus you can make fairly decent gold from pots/flasks or just from selling excess herbs.
Herb/Alchemy is what I get the most use out of. Farm everything and wait for the tool of the trade to proc the one that gives extra procs. Get a pair of gloves with crafting on it and go to town.
Engineering for the sprint and glided.
Low mobility? NOT ANYMORE BABY!
I will literally never not choose Engineering on any character ever again. It’s too good.
